Winemaking & Maturing
Natural fermentation and aging in oak barrels (3 to 8 wines) for 10 months. Slight sulphiting (Total SO2 = 45 mg/L). The grapes harvested in the late harvest are vinified in French oak barrels for 8 months to allow the Chenin to express its notes of ripe fruit.
