Winemaking & Maturing
Vinification and aging in oak barrels for 3 to 5 years. Foaming at least 12 months after harvest (Traditional Method). Aging in the cellar for 24 months on lath minimum. in stainless steel vats before foaming, with a draw in December on natural sugar and aging for 10 months on slats
