Winemaking
Its vinification is similar to that of a Rosé d'Anjou. The fermentation is stopped by the cold, in a natural way to conserve a little residual sugar. Mainly made from "bleeding" rosé, cold maceration is around 1 day maximum to maintain a fairly light shade.
Maturing
Aged on fine lees for 4 to 5 months to bring freshness and finesse.
