Vinification & Maturing
Alcoholic fermentation in temperature-controlled vats from 28 to 33 ° C. Vatting from 15 to 21 days. Moderate punching down and daily pumping over. Aging 80% in vats and 20% in barrels of 4 wines for 6 to 9 months.
