Winemaking & Maturing
Mechanical harvest. Filling the press with a lifting belt. Pneumatic pressing at low pressure. Gravity flow of juices in underground tanks. Cold settling. Vinification in thermoregulated stainless steel tanks for 4 to 6 weeks. Bottled in February.
