Winemaking and maturing
Mechanical harvest. Filling the press with a lifting belt. Pneumatic pressing at low pressure. Gravity flow of juices in underground tanks. Cold settling. Vinification in thermoregulated stainless steel tanks for approximately 4 weeks. Bottled in February for foaming. Maturing on laths for a minimum of 9 months.
