Winemaking & Maturing
Manual negative sorting before mechanical harvest. Filling the press with a lifting belt. Pneumatic pressing at low pressure. Gravity flow of juices in underground tanks. Cold settling. Vinification in thermoregulated stainless steel tanks for 4 to 6 weeks. Aging on fine lees. Bottled in late spring.
