Winemaking & Maturing
Fermentation : low temperature, 15-20 days, on tankMatured on fine lees until bottling. Wine filtered on natural clays. Corking Nomacorc bio ( sugar cane residues ) allowing to reduce the dose of SO2 at bottling

Eye : bright gold - Aromas : riped fruits, candied citrus - Flavor : spiced and mineral. Some hints of smoke and toast may be present when the bottle is opened, as I deliberately place my wines in a slight reduction to protect them naturally from oxidation.
