Vinification & Maturing
Fermentation : low temperature, 15-20 days, on oak barrels 400 liters. Matured on fine lees until bottlingWine filtered on natural clays. Corking Nomacorc bio ( sugar cane residues ) allowing to reduce the dose of SO2 at bottling
Eye : yellow goldAromas : yellow fruits, white flowers
Taste : balanced, mineral, vanilla flavour. Some hints of smoke and toast may be present when the bottle is opened, as I deliberately place my wines in a slight reduction to protect them naturally from oxidation

This wine can age between 10 years.
