Winemaking & Maturing
Cold pre-fermentation at 10°C for 3 days. Vinification in vats and alcoholic fermentation with native yeasts and without inputs. Malolactic fermentation in barrels. Aged in barrels on lees, 15% new barrels. Bottled after 15 months.

“Dark red. Nose: fruity, elegant, distinguished, offers beautiful juicy, crunchy and ripe fruit. It reveals notes of plum, black cherry and small notes of blackberry combined with fine touches of wild strawberry, licorice and blueberries. Peppery notes and ripe almonds. Mouth: fruity, balanced, elegant, distinguished and juicy, a little tension, minerality, precision as well as a beautiful acidulous background. This wine expresses the freshness. We feel blackberry, juicy, fresh raspberry and small notes of plum associated with fine touches of juicy and fresh blackcurrant as well as notes of licorice, flowers, chocolate, caramelization and a very discreet hint of pepper at the end. Nice length.”
