Vinification & Maturing
Maceration of 50% de-stemmed grapes and without sulphite for 15 days, with temperature control (15°-28°). Roasting in vats for 4 days.Soft pressing on pneumatic press. AGEING: In concrete tank & 1/2 muids for 18 months – bottling at the estate.
