Espar is one of the names given to the Mourvèdre grape in the Languedoc and more particularly in the Hérault.

Grape varieties: 80% Mourvèdre, 10% Syrah, 10% Grenache
Soils: a clay-limestone plateau, dating from the Miocene and Bartonian,
Vineyard management: 25-year-old vines
Harvest with a Pellenc harvester
Yield: 30 hl / ha

Alcoholic : 14.0% vol.

Winemaking

Destemming, traditional vinification, cement tank with separate vinification from each grape variety, and temperature control; Maceration 15 days on the Mourvèdre, on syrah, and grenache
Maturing

20% of the blend was kept in tanks under inert gas and 80% endemi-muid of 500 liters of 1 wine and 2 wines for 12 months

Sustained color, garnet. Grilled woody nose on a background of black stone fruit, condiments, spices. Palate with a warm attack, languid by a fresh and mellow fruity partition. The finish shows energy. Has digested his breeding well.
