Vinification & Maturing
Vinification without sulphites. Whole bunch vinification, maceration for 15 days with control of
temperatures (15°C- 28°C). A daily winding. Soft pressing on a pneumatic press. - Gentle pressing on a pneumatic press. AGEING: In concrete vats for 15 months – bottling at the estate.
