Winemaking & Maturing
The alcoholic and malolactic vinifications are carried out in a traditional way with the use, as necessary, of modern techniques such as cold maceration, concentration by reverse osmosis, micro-oxygenation. The wines are aged in French oak barrels for 12 to 14 months. La Petite Devise is aged in barrels of two wines.
