Winemaking & Maturing
Manual harvest in pierced cases. Filling the press with a lifting belt. Pneumatic pressing at low pressure. Gravity flow of juices in underground tanks. Cold settling. Vinification in thermoregulated stainless steel tanks for 3 to 5 weeks. Aging on fine lees in tanks. Bottled in the spring for foaming. 24 months minimum aging on laths .
