Vinification & Maturing
Whole grape pressing, gravity flow of the juices, long alcoholic fermentation (1 month)with regulated temperature, then malolactic fermentation. Aging on lees 4 months. Bottled for the “prise de mousse”. Disgorgement after 12 months.
