Vinification & Maturing
Whole grape pressing, gravity flow of the juices, long alcoholic fermentation (1 month)with regulated temperature, then malolactic fermentation. Aging on lees 4 months. Bottled for the “prise de mousse”. Disgorgement after 15 months.

Its yellow color pulling on small light pink reflections. With a very complex nose, our Blanc de Noirs cultivates aromas of white fruits and small red fruits. There are also milky trends that will plunge you into great curiosity. The fruity aromas of the nose will always be present in the mouth, enhanced by the agitation of the bubbles. This Crémant has a low acidity which allows it to gain in suppleness and persistence
