Harvest not destemmed and pressed directly. Cooling to 12 ° C, then settling within 48 hours. Bottling at the start of fermentation alcoholic, indigenous yeasts and no inputs, followed by fermentation malolactic. Aging in barrels on the lees, 35% new barrels.
Color: yellow, pale gold
Nose: fruity, elegant. Reveals toasted notes, vanilla, fruit fresh whites, almonds, mirabelle plums, light hints of citrus and gray peppers
Palate: fruity, well balanced and distinguished, o ering a nice acid frame, oily, creamy, deep and elegant with a certain nesse. A nice minerality, freshness. This wine expresses notes of quince,
mirabelle plums and light citrus, green apple, almond notes and brioche. Good length.
Aging potential:3 to 5 years - Serve at 14-16 ° C
