Vinification & Maturing
Pressing in whole or de-stemmed grapes, gravity flow of the juices, long fermentation (1 month) with regulated temperature. Stopping fermentation by cold. Small aging on fine lees.

Remarkably balanced, this aromatic explosion is very interesting. Initially playing on powerful notes of quince jelly and overripe apricots, the trail is much more airy, with a sustained floral note, notably peppermint, but also lime blossom and jasmine. Voluptuous, fat and round, the appetizer is in line with wines made from overripe grapes. A softness lines the mouth which will acquire a patina over time. As on the nose, the aromatic plays with overripe fruity notes and floral aromas. A real invitation to travel!.

Accompanied by a "foie gras" piece, this Late Harvest is a great succes.
